Jed Hellmann
A colonel in the 23rd Georgia Infantry and later a three-term United States senator, he opened a ribs restaurant after the war to feed his family. His grandmother used to make a sauce that had, a one of its ingredients, a mixture of beaten egg whites and other things, as part of her recipe.
One day, Hellmann had a jar of this white sauce sitting on a table when his 8-year old son couldn't find any butter to make a sandwich. He smeared some of the sauce on a couple of slices of bread, tossed on some ham slices and starting eating it.
"Son, that's not butter," his father said, but the boy replied, "But Father, it really is GOOD!"
The rest, as they say, is history.

Mayonnaise itself originated in the town of Mahon on the island of Menorca in SPAIN where it was called Mahonesa. It was popularized by the FRENCH after they won a naval battle against the British there in 1756.
