    I'm thinking of starting with a pork shoulder

    Nice, inexpensive piece of meat that I can try to smoke. If I f*ck it up, I can throw it to the neighbor's dog.

      Brisket?

      Never had a smoker so haven't tried it yet. I ride my bike by this guy's place in the sourlands and he's got a huge smoker in his backyard. Like a big doghouse with a chimney

        my Dad did smoked chicken wings on Memorial Day, they came out great. He usually uses it for beef brisket as well.

              Brisket is nice, but a more expensive piece of meat

              I have to get the feeling for smoking with something cheaper. What I've seen on Youtubes is that you can't be pumping out too much smoke or your meat gets this nasty taste. You just need a little blue smoke coming out of your chimney. So I guess when you put on a fresh log, it will smoke heavily until you get it well lit, then it just smokes a little. So the trick is to give it a lot of air when you're trying to get your log burning, but once it is, you need to limited the air flow through it.

                            Chicken thighs are really hard to screw up, cheap, and only take about 4 hours. Good starter piece of meat.
