Agreed. Chicken (especially legs and leg pieces) is inexpensive, and it's delicious when smoked.

Some dude gave me a smoker. What should I smoke?

Pork Shoulder is a great idea.
Roast up some garlic, smear it on like a paste, and dry rub with this:
1/4 C kosher salt
3 Tbsp espresso
3 Tbsp dark brown sugar
2 Tbsp freshly ground black pepper
1 1/2 Tbsp cumin
1 1/2 Tbsp granulated garlic
1 Tbsp paprika
Don't balk at the brown sugar. The final result is savory, not sweet. It really just aids what you're creating with the espresso and the cumin.Last edited by BigSlizz; 06-29-2015, 03:49 PM.-Slizz of Wangnutz

Question: Who is going to..............
....tend a wood fire through an entire night? Or do you take shifts with someone else? It seems a little extreme to me. I've done a lot of cooking in my day, but I've never cooked something for 24 hours straight. WTF are you smoking? A tyrannosaurus rex?
